Butter (Vegan Substitute) 250g (1c)
Vegetable Oil (Sunflower or Rapeseed) 2 tbsp
Sugar 200g (1c)
Dark Brown Sugar 150g (3/4c)
Eggs (large) 4
Vanilla Extract 1 tbsp
Salt 1 tsp
Instant Coffee 1 tsp
Cacao Powder for Baking 100g (1c)
Cornstarch 150g (1c)
Dark Chocolate Chips 200g (1c)
Instructions
Melt the Butter on the Stove or the Microwave. Let it cool down to room temperature.
Pour the liquid butter in a large mixing bowl.
Add the vegetable oil, sugar and brown sugar and blend with a hand blender until well combined.
Add the 4 eggs, one at a time, and blend until each egg is well combined with the sugar and butter.
Add the Vanilla Extract, salt and cacao powder and blend until well-combined.
Add the dark chocolate chips and fold them into the batter with a spatula.
Optional: add 200g of your favourite nuts to the batter.
Pour the batter into an 18x30cm (8x12”) rectangular baking form. Making sure to line the baking form with baking paper for easy clean-up.
Bake in a preheated oven at 175°C (350°F) for 30-35min. Make sure to slightly under-baker the brownies for fudgier brownies.
